Humankind has been growingly seeking plant-based protein sources as a substitute for animal-based proteins as consumers’ behavior is shifting towards more sustainable and healthier diets. Many are familiar with e.g., soy and broad bean, but future might provide us with more unusual, feasible protein sources. One exciting example is the extraction of protein from grass, which is successfully done in small scale. We want to dive deeper into the realm of future foods. How might the introduction of ubiquitous protein sources change the way we eat and approach food in general? What kind of benefits and customer value might be obtainable through grass protein? How might grass-based proteins be introduced as a staple on our diets and how would it look like? In this project we aim at understanding the future eating habits, given that grass protein becomes feasible in volume and cost-efficiency. The team’s goal is to develop future scenarios, product concepts and a marketing campaign for grass-protein based industry. Join us to show how to eat in the future!
